Appalachia Kitchen provides the food service for all Corduroy weddings. It is an internationally acclaimed restaurant run by James Beard semi-finalist chef Scott MacGregor. Onthesnow has cited Appalachia Kitchen as “One of the Best Restaurants at Ski Resorts around North America” in February 2023 and Reader’s Digest as “The Best Traditional Restaurant in West Virginia” in February 2024.

Meet (some) of our team! Our staff is our best feature. We are lucky to have some of the best service staff at Snowshoe, along with a talented team of cooks led by James Beard semi-finalist Chef Scott. Around the property, you might also see our fantastic general manager, James Roush, or the friendly faces behind our amazing housekeeping team.

James Roush
Jim Ed plays a role in every aspect of Corduroy Inn and Lodge. He is our general manager, a fan favorite, and your go-to man for all things wedding. Jim Ed has over 20 years of experience in the wedding industry and wants to make the day run as smoothly as possible and take all of the stress away from the couple.
Executive Chef
Scott MacGregor
Scott designs the menu for Appalachia Kitchen and caters for all Corduroy weddings with the help of the back-of-house crew he manages. He has over 20 years of experience in the culinary arts. He cut his teeth working as a chef at the renowned Greenbrier Resort and has since elevated his craft to become one of the best chefs in the country, making the semifinals of the prestigious James Beards Foundation Award.
Bar Manager
Dan Smalls
Dan is a long time local of Snowshoe Mountain who has worked at various bars, and now manages Tuque's Bar and beverage service for all weddings and events at the Corduroy. With his expertise, he tailors the wine, beer, and cocktail menus.

Billings Family
David and Kristin Billings, pictured with their daughter Lindsay, are the owners of the Corduroy Inn and Lodge. They manage marketing and some of the wedding communications.
